It goes beyond that of the artisan pasta maker ans takes into consideration all the aspects of mordern day expectations including nutrition, versatility, consistency and firmness after cooking typically referred to by Italians as Al'dente. It is an art which is further expressed in the presentation on the dinner plate, and of course the ultimate appreciation of the textures and flavours to the palate.
1. Place pasta into plenty of boiling water (approximately 4 litres for every 250g)
2. Stir gently and continue to boil for 8-10 minutes, or until preferred texture.
3. Strain and rinse under warm running water.
