Organic wholemeal spelt flour is an excellent alternative to wheat flour and can be used in a similar manner. When baking, spelt doesn't require as much water as wheat flour (approximately 10% less) and doesn't get a rise as high due to it's lower gluten content. Spelt flour can be combined with other flours.
